QUICK AND EASY WEEK DAY BREAKFAST
Here is a very easy breakfast that is still full of nutrients, (and therefore good for you), but is extremely quick for a busy school/work day morning.
This Bircher Muesli is really tasty and quick to prepare.
I just put some into a bowl, top with either almond or coconut milk and grate 1/2 an apple into it. Let it sit for a few minutes whilst you do something else (I was getting my daughters lunch ready), then add whatever extra’s you want and it is ready to go.
This morning I added a mixture of berries (raspberries, blueberries and blackberries) and a sprinkle of chia and flax seeds.
But you could add whatever fruits, seeds or nuts you wanted to make it super tasty. You could also add some yoghurt (dairy or non dairy) if you wanted to make it a bit thicker. It literally takes about 4 minutes, including resting time, to have it ready to eat.
If you wanted to eat it in work, you could just add everything at once, put it in a container and by the time you got to work it would be good to go.
The nuts and seeds provide protein, the oats sustained energy, the apple and berries phytonutrients and fibre.
