CHARGRILLED CORN SALSA – SERVED WITH FISH TACOS

Last night I made Fish Tacos for dinner and I made this delicious chargrilled Corn Salsa to go with them.  The Corn Salsa is very versatile and would be delicious with lots of other things.

  • 6 Cobs of Corn  –  wrapped in foil
  • 1 bunch Spring Onions  –  sliced thinly
  • 1 bunch Corriander  –  chopped
  • 1/4 cup Jalapeno peppers (from a jar) chopped into pieces
  • Juice of 1/2 Lime

Cook the Corn on a BBQ, turning frequently, until they are cooked and have char marks on them.  You can also cook them in the oven on 260 degrees for approx 1/2 hour turning them over half way through, although they wont have as much charring on them.

Once the corn is cooked, cut the kernels from the cobs and put them into a bowl.

Add all the other ingredients and mix thoroughly.

It is now ready to go.   It is also delicious the next day, if any is leftover !!!

I served this salsa with a selection of dishes to make up fish or vegetarian/vegan tacos.  There were Corn Tortillas (Gluten Free), Guacamole, Grated Cheese, a Kidney Bean and Green Pepper Stew (for the vegans and vegetarians), finely sliced Red Cabbage and a variety of chilli sauces.    A great dinner for a variety of diets, as you can mix and match what you want depending on what you eat.   It is also Very Tasty !!
