Using up the left over Chicken from the BBQ Chicken Thighs from the night before, I made a very quick and simple Stir Fry for lunch.

In total it took me about 10 minutes from beginning to end to make lunch for myself and my husband.

  • 2 Courgettes  –  diced
  • 1 Red Pepper  –  sliced
  • 1 bunch Purple Sprouting Broccoli stems
  • 1 very large handful of Spinach
  • Diced left over BBQ Chicken
  • Splash of Extra Virgin Olive Oil
  • 1/2 jar of Wild About Wild Garlic Pesto (see photo)

I added the splash of EVOO to the frypan and threw in everything as I chopped/sliced them.  First the Courgettes, then the Pepper, then the Purple Sprouting Broccoli, then the Chicken and lastly the Spinach.  Then I added the Wild Garlic Pesto, swirled it all around and it was finished.


So Easy !!!   This would actually be delicious cold also, so you could take it in a lunch box to work or school.






This has cheese in it, so the stir fry is not dairy free, but if you wanted to make it dairy free you could just add another sauce of your choice.
