VEGGIE HALLOUMI BURGERS WITH TAHINI DRESSING

These Veggie Halloumi Burgers are really delicious  –  even my “Carnivore” Son wants me to make these again, so they must be good!!!

I served them in an Iceberg Lettuce leaf, with halved Cherry Tomatoes, some sliced Avocado,  the Tahini Dressing and some Sriracha sauce.

The following recipe made 6 Burgers, and I used two for each portion.

This recipe is based on a recipe in the book “Green Kitchen Travels” (photo attached).

TAHINI DRESSING

  • 1 x 250g tub of Yoghurt (I used Glenisk Goats Yoghurt – it is really creamy and delicious)
  • 3 tablespoons Light Tahini
  • 3 tablespoons of Lime Juice
  • 2 teaspoons Maple Syrup
  • 1/2 teaspoon Chilli Flakes
  • 1 large Garlic Clove – crushed

 

Whisk all the ingredients together and set aside.

 

 

 

 

BURGERS

  • 1 large Courgette
  • 1 large Carrot
  • 1 packet of Halloumi (approx 240g)
  • large bunch of Mint – leaves picked off and chopped
  • Iceberg Lettuce Leaves
  • Avocado
  • Cherry Tomatoes  –  halved
  • Sriracha Sauce

 

Grate the Courgette, Carrot and Halloumi in the food processor using the large grating attachment.

Add the Mint Leaves and mix well.

 

 

Heat a dry non stick frypan on medium heat.

Form Burgers by pressing the ingredients tightly together in your hands, squeezing out excess juice.  They look really weird and do not really stick together very well, but if you get them in the pan looking like a Burger, once the Cheese melts, they actually stick together very well.  Use a spatula to get them into a good shape while cooking.  Fry them until they are brown on the first side and then carefully turn them over to brown the other side.

 

 

 

 

We put two Burgers into an Iceberg Lettuce Leaf, with the Cherry Tomatoes and Avocado and topped them with the Tahini Sauce and some Sriracha Sauce for a little Chilli kick.

 

The Goats Yoghurt I used for the Tahini Sauce !!

 

 

The Cook Book I used for the above recipe.  I will definitely be making more things out of this book, as these little Burgers were so good!!!
