QUESADILLA FOR LUNCH !!!
I wanted a quick and tasty lunch and I was wondering what to make, when I decided a Quesadilla was just the taste sensation I wanted.
Super quick and simple to make, but extremely tasty.
I have been mad busy lately with my BioKinesiology course and my Yoga Teacher Training course – both courses fitting in weekends before we are fully ensconced in the Christmas season. So with fitting in classes and then the course work associated with them, I have not had any time to put up my recipes lately. After this weekend course work will hopefully settle down again and I will have time to do a weekly post.
Anyway, back to my lunch!
- 2 Corn Tortillas
- grated Goats Cheese
- 1/2 Tomato, sliced thinly
- very thinly sliced Red Onion
- Jalapeno chillis to taste
- Smokey Tabasco sauce
- Avocado Slices
Put a frypan on the stove and heat up.
Place one Tortilla in the frypan and cover the bottom of it with grated Goats Cheese.
Place the Tomato slices, Onion slices. Jalapenos, Sweetcorn on top of the Goats Cheese.
Sprinkle some drops of Smokey Tabasco over the top.
Put a small amount of Cheese on top of all this, as it helps it all stick together.
Place the second Corn Tortilla on and let it gently cook until the underneath cheese has melted and it has some nice brown spots on the Tortilla.
Flip it over and cook the other side, until that layer of Cheese has also melted.
Take it out of the pan, put on a plate and serve with some sliced Avocado and Coriander Leaves on top.
