CHRISTMAS PUDDING MINI BUNS

I made these Christmas Pudding Mini Buns for my BioKinesiology teachers for Christmas.  They are quite boozy and rich, but delicious.

This is a two step process, as you need to marinate your mixed fruit the night before to allow the Brandy to soak into the Dried Fruit and Dried  Cranberries.   So in a glass bowel, put the Dried Fruits and the Brandy, mix it around and cover it up.   Give it a good stir every now and again.   Try not to eat it as once the fruit soaks up the Brandy it is really quite delicious!!!!!

  • 225g Butter at room temperature
  • 225g Dark Demerara Sugar
  • 4 Organic Eggs
  • 225g Self Raising Flour – Sieved
  • 1 teaspoon Mixed Spice
  • 250g Mixed Dried Fruit  –  I used Sultanas, Currents and Raisins, about 1/3 each
  • 125g Dried Cranberries
  • 1/2 glass Brandy

Preheat your oven to 170 degrees, and put Patty Pans into your Fairy Cake trays.  This mixture usually makes around 18 buns.

Cream the Butter and Sugar until nicely creamy and pale.

Add the eggs one at a time, adding some of the flour after each egg, this will stop the mixture from curdling.

Add the soaked fruit and mix well.

Put the mixture into the prepared Patty Pans and bake in the oven for 20 minutes.

Once cool, dust with icing sugar.
