BROCCOLI AND GRILLED SALMON FRITTATA
A cold Saturday morning so I was looking for something delicious and warming for breakfast. I had some left over Grilled Salmon in the fridge so thought I would use that to make a frittata.
- approx 6 stems of Tenderstem Broccoli
- palm sized portion of Grilled Salmon
- 2 Organic Eggs
- 1 teaspoon of Ghee
- a smidge of Almond Milk
- Salt and Freshly Ground Pepper
Preheat your grill.
Put your Ghee into a small frypan and put in the chopped Tenderstem Broccoli which has been chopped into pieces. Let this cook a little bit in the Ghee, mixing it around from time to time. It will take a minute or so.
Add the flaked Grilled Salmon.
Beat the Eggs with the Almond Milk and add some Salt and Pepper to taste.
Pour the egg mixture over the Broccoli and Salmon and let cook gently till the bottom is cooked and it is starting to cook through.
Place into the grill to cook and brown on top. This happens quite quickly, so keep an eye on it.

These ingredients made enough for two big portions (1/2 frittata each) or three smaller portions if you were serving it with something else, like grilled tomatoes.
