ROAST SWEET POTATO AND BUTTERBEAN PATE
I was roasting Sweet Potatoes for dinner the other night, so cooked extra to make this Sweet Potato and Butterbean Pate.
- Cold Roast Sweet Potato with the skin taken off
- 1 bottle/tin/carton of ButterBeans, drained and rinsed
- 3 cloves of Garlic
- 1 dessertspoon of Tahini
- juice of 1 Lemon
- glug of Extra Virgin Olive Oil
- Sea Salt and Ground Black Pepper
Place all ingredients into a food processor and blitz until smooth and creamy.
