OPEN CRAB SANDWICH ON OAT BREAD
This delicious open sandwich was perfect for lunch today. This quantity makes enough for three substantial open sandwiches.
- 250g White Crab Meat
- 1 small Red Chilli – very finely diced
- 1 clove Garlic – crushed
- 4 Spring Onions – fine sliced
- 1/4 teaspoon Ground Cumin
- juice of 1 Lemon
- Coriander Leaves
- Cherry Tomatoes – halved
- Lettuce Leaves
- Bread (I used my Oat Bread which is full of Seeds and Walnuts – see previous recipe), sliced and toasted
- Avocado – sliced
Mix the Crab Meat, diced Red Chilli, crushed Garlic, Ground Cumin, Spring Onions and Lemon Juice together.
Toast your bread.
Put a big scoop of the Crab mixture onto the Lettuce.
Place some lettuce leaves on the bread, some halved Cherry Tomatoes and some slices of Avocado around the plate.
Sprinkle some Coriander Leaves over the top.
